製作餡料:
How to make
the stuffing:
將鳳梨去皮刨絲,濾乾
Peel and
shred the pineapple, drain.
用中火煮滾鳳梨,加入糖,轉小火,繼續煮至金黃色稍乾即可
Bring the
pineapple to a boil, mix in sugar, turn to low heat.
Cook until the
mixture thickened and start to turn brown.
(煮的時候,需不停攪拌以勉燒焦)
(Stir
constantly to prevent scorching)
離火待冷,備用。
Remove from
heat and set aside.
應一應節, 加塊咸蛋黃 ~ 由於體積和技術有限, 用四分一個蛋黃吧!
製作酥皮:
How to make
the pastry:
麵粉、玉米粉、奶粉和蛋黃粉過篩,備用。
Sieve plain flour, corn flour,
milk powder, and custard powder. Set aside.
將牛油和糖霜打至軟滑鬆白;拌入蛋黃,
Beat butter with icing sugar till
creamy. Stir in egg yolk.
加入已過篩的麵粉拌勻成麵團。
Mix in the
dry ingredients to form a dough.
做法:
Directions:
將鳳梨餡、麵糰各分成12份
Divide the
dough and filling into 12 portions.
將麵糰搓圓後按成一圓片,將搓圓的鳳梨餡包好,搓成四方狀。
Roll out a ball of dough and
insert a scoop of pineapple filling.
Wrap the dough around the
stuffing, and shape into a square
放進已預熱的焗爐,以 180 度焗 10-15 分鐘至金黃色即可
Bake at a
preheated oven at about 180C
for 10-15 minutes, or until golden brown
取出放涼後,即可進食、包裝或放入密封容器內收藏。
