自製酥皮 [食譜] ~ Homemade Puff Pastry [Recipe]

步驟:
Directions:
Step 1:
Make the
Doughs
將材料分別混合成麵團A和B。
Combine the ingredients
respectively to form Dough A & B.
Step 2:
Assemble
the Doughs
將麵團A輾成十字型(約10X10寸)。
Roll out Dough A to form a
cross (approx. 10”X10”).
將麵團B壓按成約5X5寸正方形。
Reshape Dough B to the size roughly to a 5”X5” square.
用麵團A包裹麵團B。
Put Dough B in the
centre of Dough A, and fold over the sides.
Step 3:
輕輕將麵團擀成一個長方形(約5X15寸)。
Gently roll the dough
with rolling pin to form a smooth rectangle(approx. 5”X15”).
頂部和底部向中間折。
Fold the top and
bottom quarter to cover the middle.
然後對折。(如果麵團變軟, 可冷藏15分鐘)
Then fold in half. (Chill
in fridge for 15 mins if the dough becomes too soft)
重複 步驟3 三次以上。
Give the dough a
quarter turn, and repeat Step 3
for at least 3 more times.

滾平酥皮麵團
Roll out the puff pastry dough
卷成筒
Roll into a cylinder
切圈
Cut into circles
壓扁。
Flatten the dough against the walls of the molds.
