手擀麵 [食譜] ~ Handmade Noodles [Recipe]





材料:

麵粉

Plain Flour
100 g
1/4茶匙
Salt
1/4 tsp
~ 30毫升
Water
~ 30 ml

步驟:
Directions:

麵粉, 過篩後, 分次加入水雞蛋, 用筷子攪拌混合成麵團。
Gradually stir water and egg in sieved salted flour. Combine all the ingredients to form a dough.



放到桌上揉至光滑, 蓋上麵團靜置30分鐘
Knead until dough is smooth. Cover with damp towel and set aside for 30 minutes.



把麵團揉成長條狀,再桿平成麵片
Roll the dough out into rectangle.



將擀好的麵皮折疊 (摺疊時適量的撒麵粉,防止沾黏在一起)
Fold the dough (Sprinkle with flour to prevent the dough from sticking).



切條
Cut into slices




切成後 , 撒上適量的麵粉(為了不讓麵條互相黏住) 即可
Spread out the noodles and sprinkle on top with some flour to prevent sticking.




煮熟即可
Cook to your likings
