鮮茄焗豬扒飯 [食譜] ~ Baked Pork Chop with Fried Rice [Recipe]

Seasoning:

Tomato Sauce:

做法
Directions:
 
(1)
豬扒用醃料醃約30分鐘。
Season the pork chops. Set aside for 30 minutes.

爆香洋蔥(切粒
,再加紅蘿蔔(切粒,最後加入水,蓋上鑊蓋至蒸發後,
Sautee diced onion and carrots until tender


加入飯 ,
及少許生抽炒勻
Stir in rice, eggs and add soy sauce to taste.


把炒飯放進烤盤中
Pour the fried rice in a baking pan

在油鑊,放下洋蔥炒Brown sliced onion
加入蕃茄 , 番茄上湯Mix in the tomato, tomato paste, and stock.

拌勻
,蓋上鑊蓋至煮滾後盛起備用
Bring it to a boil. Set aside.

用猛火把豬煎至金黃後盛起,放在飯
In skillet brown pork chops on both sides. Arrange pork chops on top of fried rice.

將醬汁淋上豬扒飯,上面灑上芝士,放入已預熱至200C的焗爐中,焗約1520分鐘
Top the pork chops and fried rice with the tomato sauce and cheese.
Bake in preheated oven (200 degree C) for 15 to 20 minutes.


我不太好芝士, 取而代之的是芝麻~

得那麼成功, 我都不忍心把它們切



關於蕃茄
如果喜歡稠一點的汁可加適量麵粉調節
可另加一茶匙 paprika 進汁內
If you like thicker sauce, stir in some plain flour while cooking the sauce.
I also add 1 teaspoon of paprika to the sauce just to taste.

說起 paprika 就讓我想到西班牙呢!
