牛角飽 [食譜] ~ Butter Croissants [Recipe]
材料:

麵團
Dough

高筋麵粉
Bread Flour
500 g
Sugar
50 g
Salt
1 tsp
酵母
Active Dry Yeast
1 tbsp
牛油 (已溶)
Melted Butter
30 g
牛奶
Milk
200 ml
Water
50 ml



牛油

步驟:
Directions:

Step 1:
Make the Doughs




先將乾酵母加進清水裡直至溶化。
Dissolve the yeast in the water.

麵團材料混合, 攪拌至起筋有彈性。
Combine all of the dough ingredients; knead until the dough is elastic.







蓋上濕布靜置發酵至兩倍大,大概60-90分鐘。
Cover with damp towel and let rise at room temperature for 1 to 1½ hours.

壓走多餘空氣,以保鮮紙包面再靜置發酵30分鐘,放入雪櫃30分鐘。
When the dough has doubled in size, punch it down. Cover with plastic wrap, and let rest for 30 minutes. Then refrigerate for another 30 minutes.

Step 2:
Assemble the dough



麵團輾成長方形(5X15)
Roll out Dough to form a rectangle (approx. 10”X10”).







牛油按成5X5寸正方
Reshape butter to the size roughly to a 5”X5” square.






麵團包裹牛油
Place butter in the centre of the dough, and fold over the sides.

Step 3:
Laminate the dough

輕輕將麵團擀成一個長方形(5X15)
Gently roll the dough with rolling pin to form a smooth rectangle(approx. 5”X15”).





以三分之一折疊為三層,再桿平。冷藏15分鐘。
Fold the rectangle of dough into thirds. Let rest in the freezer for 15 mins

重複 步驟3 三次。
Repeat Step 3 for 3 more times.





Step 4:
牛角飽製作
Shape, Proof and Bake Croissants

滾平麵團 (3mm )
Roll out the dough to a 3 mm thickness






切成三角形,圈成形,再靜置發酵至兩倍大,大概60分鐘。
Cut out triangles, and roll up

*** 提示: 於三角形底部 (白圈) 切一小刀有助造型
*** Tips: make a small slit at the bottom edge of the triangle (indicated in white circle) to fan out the croissant



再靜置發酵至兩倍大,大概90 - 120分鐘。
Let rise at room temperature till doubles in size for 1½ to 2 hours.




刷上蛋液
Whisk the egg and lightly brush the croissants with this egg glaze,

放入已預熱焗爐(200°C)15分鐘
Bake in preheated 200°C oven for 15 minutes. 




變奏
Variations
1) Pain au Chocolat


(Step 4)
Cut the dough into rectangles.
Chop some chocolate and distribute it the centre.
Fold into thirds. Proof and bake the same.
