自製酥皮 [食譜] ~ Homemade Puff Pastry [Recipe]



材料:
Ingredients:
(~ 12 tart shells)



麵團 A
Dough A

麵粉
Plain Flour
100 g
Salt
1/4 tsp
Water
35 ml



麵團 B
Dough B

麵粉
Plain Flour
100 g
牛油
Olive Oil / Butter
50 g


步驟:
Directions:

Step 1:
Make the Doughs





材料分別混合成麵團AB
Combine the ingredients respectively to form Dough A & B.

Step 2:
Assemble the Doughs





麵團A輾成十字型(10X10)
Roll out Dough A to form a cross (approx. 10”X10”).


麵團B按成5X5寸正方
Reshape Dough B to the size roughly to a 5”X5” square.





 麵團A包裹麵團B

Put Dough B in the centre of Dough A, and fold over the sides.

Step 3:
輕輕將麵團擀成一個長方形(5X15)
Gently roll the dough with rolling pin to form a smooth rectangle(approx. 5”X15”).




頂部和底部向中間折。
Fold the top and bottom quarter to cover the middle.




然後對折。(如果麵團變軟, 可冷藏15分鐘)
Then fold in half. (Chill in fridge for 15 mins if the dough becomes too soft)




重複 步驟3 三次以上。
Give the dough a quarter turn, and repeat Step 3 for at least 3 more times.





酥皮撻皮製作

滾平酥皮麵團
Roll out the puff pastry dough





卷成筒
Roll into a cylinder


 

切圈
Cut into circles


 
壓扁。
Flatten the dough against the walls of the molds.
