製作步驟
Directions:

[蛋糕 ~ CAKE]
將牛油、蛋黃打成忌廉狀
Cream together the butter ,and egg yolks until light and creamy. 


奶入麵糊中打勻
Thoroughly mix in the milk
 
加入已篩過之麵粉發粉肉桂/... ,快速攪拌至材料混合成麵
Sieve and add all dry ingredients at once; Beat until well blended.





把蛋白打起泡, 分次加入糖打至硬身
Whisk egg white until it resembles stable foam, add sugar in three sections and continue whisking until hard peak forms.





蛋白霜分次拌入麵糊, 慢速攪至順滑
Fold in the meringue to the batter in three sections; Incorporate until well combined.





將麵糊盛入焗模中。
Ladle the cake batter into the cake liner





放入已預熱至180度焗爐中焗30-40分鐘 [MINI: 15-20分鐘]
Bake in preheated 180 degree C oven for 30-40 minutes [MINI: 15-20 minutes]




[餡料~ Fillings]
將忌廉、糖打起
Beat together the cream, and sugar until light and thick.

加入其他材料拌勻 (如有)
Gradually add in the flavourings (if any)





蛋糕取出後便起出蛋糕模
Turn the CAKE out from pan once removed from oven






蛋糕罝於紙上, 塗上奶油、餡料, 再將蛋糕卷上。
(溫馨提示: 實線可以切除,虛線用刀背壓一壓,會較容易卷~ )
Place the CAKE on a greaseproof paper, spread the FILLINGS evenly, then roll the cake up.
(Rolling Tips: Trim the ends marked with solid lines, and slightly press the end marked in dotted line with the back of the knife. )





將蛋糕放入冰箱定型(30分鐘) 才取出切件
Chill the Swiss Roll in the fridge to set (~30 minutes) before slicing
